Sounds like you have a real good start. What I do next is called a strip wash. I would totally agree that the 31 is the identification for the size and a way to keep things straight at the time of production. It looks like to me that you possibly have the style and assembly numbers. I am sure when the customer recived a large box of pieces that it had directions and some assembly numbering system to it.

The place where i have seen them the most is on the sides of the engine hatch covers. You possibly might also find them stamped into floor boards and under seat bottoms. The steam or forefoot could have the size of the boat stamped into it like 30. One time i did see it written in crayon type pencil...
