gas tanks

I have 2/ 75 gal. gas tanks can you fill them from just one side, self leveling

No, they are plumbed through the top of the tanks. There should be a series of valves you can draw off either one or both tanks at a time though.
Boats are to be made of wood, otherwise, God would have grown fiberglass trees.

That old copper and brass stuff has too many fitting and is not worth the trouble....I would ditch it and go with approved rubber lines and one tank to one engine setup.

Those old tanks will be your biggest headache....been there....done that....

If the decision is made to go to rubber lines you have to make sure you ground the tanks to the engines. The one good thing about being able to draw off either tank is if you get some contaminants in one tank you can still run on both engines.
I still have the original tanks in my cruiser and I hardly get any junk in the sediment bowls at all. It's all in how they have been cared for.

Im with you Captain...best setup is using either/both tank for either/both engine. All copper lines.

American Beauty still has her original tanks and plumbing system. We did swap her over to rubber hoses and made sure the tanks were grounded. She had spin on filters and I added sediment bowls.

Had the tanks "polished" twice last year. That process is a little expensive but it did a very good job. Had no real fuel related trouble just lots of condenser failure. (I had never had a condenser fail in my life, but had two go out in a short 6 weeks last year)
