Rudder

I'm ready to reinstall the entire rudder assembly on my '59 CC Continental 18'. I'm aware of the sealing in the packing nut on the rudder itself. What material do you recommend I use to seal around the two carriage bolts that hold the rudder shaft log?

I used a small amount of 3M5200. Applied a small bead around the rudder tube-to-hull as well. Yes, 5200 can be a challenge to remove a fitting later, but applying heat to the fitting or bolt should loosen it up if you didn't go crazy with the 5200. If you sealed the wood at the bolts and tube areas well with CPES, any possible seepage should not get into the wood.

A less permanent sealant like maybe Boatlife caulk might be better for future removal.
