I also have the same boat with the ceder as you described. After 20 years I finally stripped the mahogany stain off of the dash and side boards and went natural. Wow! Boy did that change the boat and the contrast colors really POP!.

The boat had four coats of sealer, then 8 coats of varnish (Captains). The stain was CC Red. Some of the big sections have already peeled off, about 6x3 inches.
