Which ones would have been correct? The smooth chrome ones or the dished ones with a grain pattern in the dish.

Your instrument panel light switch looks correct. The other is modern.
Boats are to be made of wood, otherwise, God would have grown fiberglass trees.

Neither one is right if you are going for factory correct. It should be a small knob with a knurled ring holding it not a hex bolt holding it in the dash.
